  1. En primer lugar preparamos el fumet. cogemos una cazuela de barro y la ponemos al fuego con un chorrito de aceite de oliva, freimos las gambas salpimentadas, y apartamos.
  2. En el mismo aceite que ha quedado, freimos la cebolla muy picadita con las zanahorias tambien troceaditas.
  3. Cuando este añadimos la harina, damos unas vueltas y añadimos el tomate rallado, con el bouquet de hierbas, el vino, el coñac, y 2 vasos de fumet de pescado y dejamos cocer a fuego medio 15 minutos.
  4. Entonces pasamos por el chino, o colador, disponemos las gambas en la cazuela, vertemos encima la salsa coladita,las setas, si son secas las habremos tenido antes unas 3 horas a remojo.
  5. Añadimos las almendras picaditas en el mortero con los ajos peladitos y dejamos cocer todo junto a fuego lento 15 minutos, rectificamos de sal y pimienta molida y servimos inmediatamente.
