  5. Mezclar las yemas y el queso con las claras a punto de nieve con una espátula para que no se bajen mucho. Despacio y suave, sin batir ni aplastar.
  6. Montar en una fuente por capas. Primero los bizcochos un poco mojados en café (muy poco), basta con asustarlos con un poco de café. Luego una capa de crema, otra de bizcochos asustados en café y otra de crema.
  7. Cubrir con el cacao en polvo y dejar en la nevera al menos 1 día.
