  2. Mantén al fuego hasta que estén tiernas. Sí son fabes, conviene "asustarlas" echar un pelín de agua fría para bajar la temperatura de cocción para que no suba. Sí cuece a fuego vivo se romperán y será un puré 🤮
  3. Retira las espumas que pudieran salir.
  4. En una sartén sofríe cebolla muy picada y cuando esté transparente añade la harina y fríe un poco para que pierda el gusto a crudo. Acto seguido el pimentón y para que no se queme un cazo de caldo de la cocción. Vuelca el contenido de la sartén en la olla y deja que ligue el caldo. ¡Ya! 😍😍😍😍😍😍😍😍
  5. Se puede prescindir del refrito (dependerá de la calidad de las fabes, de lo que espesen y de la cantidad y calidad embutido) también se puede y debe poner una tajada de lacón en el compagno.
