  1. Hacemos el sambayón: batimos las yemas, el azúcar y el coñac sobre un baño de vapor. Para eso, ponemos una olla con agua y cuando empiece a hervir ponemos el bol y batimos con batidora 5 minutos sobre la olla. Que el agua no toque el bol.
    Después de 5 minutos, lo sacamos y seguimos batiendo 5 minutos más o hasta que vuelva a temperatura ambiente. Tiene que quedar color cremita.
  2. Le agregamos el queso mascarpone. Lo agregamos de forma envolvente para que incorpore aire. Lleva su tiempo que el queso quede bien mezclado y la mezcla sea suave y sin grumos. Paciencia.
  3. Le agregamos la crema semibatida (los picos no se tienen que sostener, en el vídeo te muestro como queda semibatida). Agregamos en varias partes en integramos de forma envolvente para que no pierda aire
  4. Mojamos las vainillas en la mezcla de café con dos cucharadas de azúcar y un poco de coñac. Es un toque, que absorban pero que no se rompan. Y las ponemos en un molde de 20x30x5 aprox. Hacemos una base de vainillas empapadas en café y le ponemos la mezcla arriba. Ponemos otra capa de vainillas mojadas en café y otra capa de mezcla. La última capa tiene que ser de mezcla, y espolvoreamos con cacao y le rallamos chocolate encima.
  5. Llevamos a la heladera mínimo 3 horas. Lo ideal es dejarlo toda la noche. Hacerlo de un día para el otro
