- 200 gramos fideos cabellín
- 1/2 cebolla blanca mediana
- 1 diente ajo
- 1 ñora
- 2 tomates rama (o pera) rojos y maduros
- 1 hoja laurel
- 500 ml caldo de verduras
- 100 ml vino blanco
- 1 y 1/2 cucharaditas de salsa de soja
- 1 cucharada alga Kombu
- 2 champiñones grandes
- 150 gramos setas congeladas (mezcla)
- Sal si precisa
- Aceite de Oliva

- Poner a hidratar la ñora, sacar la pulpa y reservar
- En una cazuela poner el caldo de verduras, el vino blanco, la salsa de soja y el alga Kombu. Infusionamos a fuego bajo 15-20 minutos, colamos (el alga Kombu sólo es para hacer caldos no ingerirse) y reservamos caliente
- En una paella o sartén apta para el horno ponemos un poco de aceite a fuego suave.
- Picamos fina la cebolla y la pochamos unos 10 minutos
- Laminamos el ajo y lo añadimos a la paella junto con el laurel. Dejamos unos 5 minutos
- Picamos los tomate, los añadimos a la paella con la pulpa de la ñora y dejamos espesar, unos 15 minutos
- Añadimos las setas troceadas si son muy grandes y dejamos evaporar el líquido
- Precalentamos el horno a 180º calor arriba y abajo
- Añadimos los fideos a la sartén, subimos el fuego a medio y dejamos tostar los fideos unos 4-5 minutos sin que se quemen, si se pegan un poco por abajo es el socarrat...riquísimo
- Cubrimos con el caldo caliente, dejamos unos 5-6 minutos que se evapore parte del caldo y los fideos estén al dente
- Metemos al horno unos 15 minutos, que haya evaporado todo el caldo y la capa superior esté crujiente. Sacamos y dejamos reposar 5 minutos
- Servimos caliente recién hecho. Yo lo he acompañado con alioli casero (receta en mi perfil)
