Esta era una de las recetas que tenía “borrada” de nuestro menú familiar, simplemente, porqué de pequeña me gustaba tanto, que termine saturándome.
👨🏻‍🍳El cocinero principal de esta receta era mi padre, y cómo le hacía tanta gracia mi pasión por este plato, me lo hacía siempre que tenía ocasión de entrar en la cocina.... con la llegada de mi saturación, dejó de prepararla, pero no por ello dejó de gustarle... Él es mucho de recetas de paella 🥘
Sino recuerdo mal, la aprendió de su madre 👵🏼, que la hacía una vez por semana, todos los veranos en Platja d’Aro —donde siempre veraneaban🏖—. Como cualquier receta familiar, tiene sus trucos, que no sé sabe muy bien porqué, seguimos repitiendo.... pero eso es lo que hace una familia, no?

Ingredients and spices that need to be Prepare to make Fideuá:

  1. 450 g Fideos de fideuá
  2. 3 Cebollas
  3. 1 Tomate
  4. 1/2 Pimiento rojo
  5. 1/2 Pimiento verde
  6. 400 g Sepia limpia
  7. ~13 Langostinos grandes cocidos
  8. 500 ml Fumet casero
  9. Hebras de Azafrán
  10. 1 Cucharadita Pimentón dulce de la Vera
  11. 1/2 Cucharadita Pimentón picante de la Vera
  12. Sal
  13. Aceite de oliva virgen extra

Steps to make to make Fideuá

  1. Hervimos los langostinos, escurrimos y pelamos. Reservamos. Cortamos la sepia en trocitos de bocado. Y reservamos también.
  2. Infusionamos las hebras de azafrán y reservamos.
  3. Picamos las cebollas, los pimientos y el tomate.
  4. Ya en la paella, doramos los fideos, con un chorreón de aceite a fuego medio y, vamos dándoles vueltas poco a poco hasta que estén dorados. Retiramos y reservamos.
  5. En esa paella (con ese mismo aceite), rehogamos a fuego medio las cebollas y los pimientos, con un poquito de sal. Cuando se hayan pochado, agregamos el tomate.
  6. Una vez rehogados, agregamos las sepias y, dejamos que se hagan unos minutos. Agregamos los fideos reservados, los langostinos, el azafrán infusionado y los dos tipos de pimentón; y cubrimos con el fumet casero —la cantidad será más o menos la misma que en la pasta, en mi caso 500 ml, pero dependerá de los fideos—.
  7. Cocinamos hasta que la pasta esté en su punto. Y la dejamos reposar, fuera del fuego, unos minutos más.
